Study Warns Popular Corn Snacks May Contain Cancer Linked Mycotoxin Contaminants

A new study suggests that some processed corn-based snacks, including popcorn and corn chips, may contain heat-resistant mycotoxins produced by fungi. Researchers advise limiting ultra-processed foods and choosing a balanced diet to reduce potential long-term health risks.

A recent scientific study has raised concerns about the safety of several popular processed snacks, suggesting that some corn-based products may contain mycotoxins—naturally occurring toxic compounds produced by certain types of fungi that have been linked to long-term health risks, including an increased risk of cancer.

Researchers from Rutgers University–New Brunswick in New Jersey analysed biological samples and found evidence of exposure to mycotoxins among study participants, including pregnant women. The researchers noted that these toxins can contaminate crops such as corn, wheat, oats, nuts, and dried fruits before food processing. Although the fungi themselves may be destroyed during manufacturing, some mycotoxins can survive high temperatures and remain in finished food products.

The study highlights that certain processed snacks, including popcorn, corn chips, tortilla chips, breakfast cereals, and other grain-based packaged foods, may contain detectable levels of these compounds if contaminated raw ingredients are used. Researchers also pointed to processed meat products such as sausages, bacon, and chicken nuggets, as well as frozen convenience foods and some packaged cookies and doughnuts, as foods that should be consumed in moderation as part of a balanced diet.

Scientists stressed that the findings do not mean every packaged snack contains harmful toxin levels or that occasional consumption will cause cancer. Instead, they recommend reducing reliance on ultra-processed foods, choosing fresh and minimally processed alternatives whenever possible, and maintaining a varied diet.

Further research is underway to better understand long-term exposure to mycotoxins and its potential impact on children's health and overall disease risk.
